VINEYARD AREA:

Selected vineyards in the provinces of Perugia and Terni, in the central Italian region of Umbria. The vineyards lie at an altitude of 300 to 400 meters above sea level.

HARVEST:

Manual harvest in mid September and exclusively during the early hours of the day.

VINIFICATION:

The grapes are de-stemmed and delicately pressed. The must is then chilled to 10-12°C and left to rest for approximately 36 hours. Fermentation is carried out using selected yeasts at a controlled temperature of 16 to 18°C. The wine is then left on its lees in stainless steel tanks for approximately two months in order to maximise extraction of complex aromas.

WINEMAKER'S NOTES:

The wine is pale yellow in color, with a fragrant bouquet displaying hints of mango, raw honey and sage. In the mouth it is dry and earthy, with an elegant and balanced acidity and flavors of pears, plums and melon. The finish is long, mineral and persistent.
