VINEYARD AREA:

The grapes for Rosa Bianca are selected from the finest vineyards in the provinces of Verona and Treviso, in northern Italy.

AGE OF VINES:

15-20 years old.

PLANT TRAINING AND DENSITY:

The vines are trained using the typical Guyot and pergola Veronese method. Plant density is around 4.000 plants per hectare with a yield of 2 kg per plant.

HARVEST:

The grapes are harvested manually at the end of August.

VINIFICATION:

The two grape varieties are vinified separately using the same procedure. The grapes are de-stemmed and very gently crushed in a pneumatic press. For Rosa Bianca only the first juice is used. Prior to fermentation the juice is chilled to 12-14°C. The must is left to rest for approximately 18-24 hours to allow a natural separation of sediment and juice. After decanting, selected yeasts are added to initiate fermentation. First fermentation occurs inside steel vats at a controlled temperature of 15-16°C for a duration of 10-12 days.A subsequent secondary fermentation in low-temperature pressurized tanks is carried out to obtain the perfect effervescence.

AGING:

In stainless steel tanks for 4-6 months.

WINEMAKER'S NOTES:

The wine has a lovely pale straw yellow color with a rich scent of green apples, lemons and grapefruits. It has a pleasant and refreshing acidity. On the palate it is deliciously dry and bursts with a fresh taste of peaches and apples. The bubbles have a fine and persistent perlage. Enjoy it by itself or as a great partner to seafood.
